George’s Buffalo Chicken Dip
Ingredients
8 oz cream cheese
1/2 bottle franks hot sauce (2 oz per chicken breast)
1/2 stick margarine or butter
3-4 boneless chicken breasts
1/2 jar Maries Blue Cheese Dressing (Jerzey only uses a thin layer on not half the jar)
Shredded mozzerella cheesePrepare
Use approx a 64 square inch pan
Boil chicken breasts and shred
Melt margarine in a large bowl and add hot sauce and shredded chicken and mix together.
Spread cream cheese out on bottom of baking dish then add chicken misture and top with a thin layer of Maries and then the mozzerella cheese
Bake at 350° for 30 minutes and serve with Scoopes by Frito Lay
Kendra’s Kick Ass Chili
This chili is not for the faint of heart. A house favorite, this chili is easy to make and sure to satisfy a cave full of hungry sports fans.Ingredients
2-3 lbs. of ground beef
1 lb ground pork
2 jalepeno peppers with seeds
4 green peppers
1-2 onions
garlic – lots
1 can beef broth
1 28oz can chopped tomatoes
1 28 oz can tomatoe sauce
1-2 small cans green chilis
1 bottle dark amber beer
3-4 cans of kidney beans red, white or mixed
10-12 Tablespoons chili powder
2-3 Tablespoons Paprika
2 teaspoons Cumin powder
some salt
1/2 cup ketchup or more
2-3 Tablespoons olive oil
some butterPrepare
Start by sauteing onions, peppers and garlic in a couple of tablespoons of olive oil. Add all the spices while sauteing vegetables. After onions and peppers are soft and onions are translucent, being to add tomatoe sauce, beef broth, green chilis, fried meat and beans. Bring to a boil and then simmer for at least one hour.
Other ingredients may be added to enhance flavor as follows:
- While browning the beef and/or pork add some liquid smoke flavor
- Find some interesting chili powders at the grocery store and try them out.
- Add more beans if you can tolerate them, or only add 2-3 cans if not
- Instead of so much beef, try adding italian sausage, chopped turkey meat or taco meat. Although the beef really gives it the best flavor.
- Add more ketchup if you like, it sweetens up a bit and takes the edge off
- If you like it hot and extremely spicy,add more things like red pepper flakes, tobasco sauce, hot chili powder or even a third jalepeno pepper. Watch out though, the spice sneaks up on you! Scale back on the hot stuff if you can’t take the heat.
- You can add a can of tomatoe soup for a change of pace, see what you think
- Try using a bunch of different types of peppers for fun
- Don’t forget the toppings: Oyster crackers, chopped raw onion, grated cheese, avocado slices, green or black olives
I’m not much on exact ingredients, I just wing it and give it a taste after a while. Usually turns out great, although no two batches are exactly the same.
